Clare gets most of the credit for this recipe. The combination of corn, beans, and vegetables makes a tasty, healthy, and quick meal. It is particularly nice in the summer, since it does not require any cooking.

Ingredients Directions
  • 1 avocado cubed
  • 1/2 pound frozen corn thawed
  • 1 cup bell pepper diced
  • 1/4 cup hot peppers minced
  • 1 can black beans rinsed and drained


  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/4 cup cilantro minced

If your corn is still frozen, defrost it in the microwave for a bit. Cut up all the vegetables, drain the beans, and combine everything in a large bowl. Serve with tortilla chips and your favorite salsa. I particularly like salsa verde with this meal.
