Szechuan eggplant and bok choy lo mein

Ingredients

  • 2 medium eggplant
  • 1 pound baby bok choy thinly sliced
  • 1 cup thinly sliced onion
  • 1 cup thinly sliced red bell pepper
  • 2 cans seitan (mock chicken) (14 oz) drained and chopped
  • 1 tablespoon minced ginger
  • 1 pound lo mein noodles
  • 1/4 tablespoon canola oil

Sauce

  • 1/4 cup spicy black bean sauce
  • 1/4 cup soy sauce
  • 1/2 cup water
  • 1 tablespoon corn starch
  • 1/8 cup lime juice
  • 1/4 cup rice wine vinegar
